Stream Super Bowl LIX live & free in 4K on @Tubi or watch on FOX! fxn.ws/3EkBOVV Chiefs Arrowhead Chili with Asiago Grit Fritters Chili Ingredients: 1 pound sirloin steak (small dice) 1 pound lean ground beef 1 yellow onion, diced 1 red onion, diced 1 green bell pepper, diced 6 garlic cloves, chopped 1 poblano pepper, seeded and seared 2 ½ tablespoons chili powder, divided (or to taste) 1 teaspoon cumin 1 (14.5-ounce) can crushed tomatoes 1 (16-ounce) can red kidney beans, drained 1 (18-ounce) can diced tomatoes with juices 1 ½ cups beef broth 1 cup coffee 2 tablespoons tomato paste (or as desired) Salt and black pepper, to taste 1 cup mixed cheese (for topping) Chili Instructions: 1. In a large pot, sauté all vegetables in tallow until they develop color. 2. Remove from pot and add sirloin and ground beef. Brown the meat, then drain any excess fat. 3. Add vegetables back to the pot and deglaze with beef broth. 4. Stir in canned tomatoes with juices, coffee, chocolate, and spices. Bring to a boil. 5. Add tomato paste, then reduce heat and simmer uncovered for 45-60 minutes or until chili reaches the desired thickness. 6. Top with cheddar cheese, green onions, cilantro, or other favorite toppings. Asiago Grit Fritters Fritter Ingredients: 1 package “Grandma Betty’s Premium Yellow Grits” Water (or low-sodium chicken stock) ½ quart tallow or canola oil Parchment paper 1 quarter sheet pan or aluminum pan 1 cup Asiago cheese (or cheese of choice) 2 tablespoons salt 2 tablespoons black pepper 2 eggs 1 cup flour 1 cup panko (or homemade) Fritter Instructions: 1. Bring 4 ½ cups water (or chicken stock) to a boil. 2. Add salt and pepper. 3. Stir in 1 ½ cups grits until thickened, then reduce heat. Add cheese to taste. 4. Line a quarter sheet pan with parchment paper and pour in grits. Lightly tap to level, then freeze for a few hours until solid. 5. Heat frying oil to 350-360°F (176-190°C). 6. Remove frozen grits from the pan and cut into rectangles, triangles, or preferred shapes (1 ½ inches thick and 4 inches long recommended). 7. Coat each piece in flour, dip in egg batter, then coat with panko. 8. Fry until golden brown, then place on a rack with a cloth to drain excess oil.
